Peel and cut the cooked beetroot into small pieces to make mixing easier.
- Mixer
In a blender or using an immersion blender, mix the beetroot with the Greek yogurt until smooth and homogeneous.
- Season
Season with salt and pepper to taste. Taste and adjust seasoning if necessary.
- Serve
Pour into a glass or bowl. Add a few drops of flavored oil to the surface to enhance the flavor.
