Recipe

  • Preheat the oven to ( / Gas Mark 6-7).
  • Peel the potatoes, cut them into cubes, rinse them, and dry them.
  • Slice the onions and sauté them over low heat until they become tender.
  • Add the cut lardons (bacon/pancetta) and let them brown slightly.
  • Incorporate the potatoes. Sauté them until they acquire a nice golden color. Season with salt and pepper.
  • Arrange the mixture in the baking dish (which you can flavour by rubbing it with a clove of garlic).
  • Cut the Reblochon cheese in half. Place the two halves on top of the mixture, rind side up.
  • Bake for 20 minutes. The cheese should be melted, golden, and slightly gratinéed.
