- Preheat the oven to ().
- Cut the leeks in half lengthwise, and rinse them thoroughly to remove all the dirt.
- Generously brush them with olive oil and honey.
- Place them in a baking dish, cut side down.
- Roll out the dough on your work surface and lightly prick the bottom with a fork.
- Spread the Beaufort cream over the entire surface of the dough.
- Gently flip the dough (cream side down) over the brushed leeks.
- Baking: Bake for 35 to 40 minutes, until the pastry is golden and the leeks are tender and lightly caramelized by the honey.
