Recipe

  • In a pot, bring salted water to a boil.
  • Finely slice the onions and sauté them in a pan over low heat until golden.
  • Meanwhile, put the pasta in the pot to cook and follow the cooking time indicated on the package.
  • When the pasta is al dente, reserve a little of the cooking water, drain it, then add the pasta to the pan with the onions.
  • Add the Beaufort cheese, cut into small pieces, so it melts gently over the pasta.
  • Pour in 2 to 3 tablespoons of the cooking water to bind everything together and let it simmer briefly, just long enough to obtain a creamy sauce.
