Recipe

  • Preheat the oven to 180°C.
  • Season the roast on all sides with salt and pepper.
  • Butter a dish and place the roast in it.
  • Peel the potatoes and the apples, cut them into quarters, and arrange them all around the roast in the dish.
  • Peel the garlic and scatter the cloves in the dish.
  • Add approximately 3 tablespoons of cold water to start the cooking and prevent the bottom from sticking.
  • Bake for 1 hour and 30 minutes, basting frequently to keep the roast and potatoes moist and golden.
  • When the roast is removed from the oven, slice it immediately and serve the entire dish with its juices.
