Recipe

  • Rub the fondue pot (caquelon) with a clove of garlic to delicately flavor the fondue.
  • Pour 20 cl (200 ml) of white wine into the pot and heat until simmering.
  • Add a handful of cheese and stir in a figure-eight motion with a wooden spoon.
  • Once this handful is melted, add a new one and continue stirring in a figure-eight motion.
  • Repeat the operation until all the cheese intended for the fondue is incorporated.
  • Continue cooking and stirring for about 5 minutes until you obtain a smooth and creamy texture.
  • Place the pot on the burner (rechaud) and serve immediately.
  • According to your taste, add a little kirsch at the end, or an egg yolk for a more indulgent touch.
